2lbs ground beef
1/2 small onion
2 chipotle peppers (optional) I strongly recommend it
4 cups of zucchini cubes
5 cups kale
1 cup cauliflower rice
Salt and black pepper
Mix cauliflower rice , oregano, cumin , salt , garlic powder into the ground beef, you can make 1 or 2 ounce meat balls size I made mine a 2 ounce size.
Pure the tomato,onion,chipotle peppers, garlic, and salt
In a big pot heat up the olive oil than pour the tomato mix and let it simmer for a minute than put almost a gallon of water and let it simmer one it’s simmering put the meat balls and let them cocked add the zucchini, kale and cilantro and more salt if it need once it’s done serve and garnish with avocado
